Toledo was the capital of medieval Spain and the place where Alfonso X assembled translators of Arabic, Hebrew, and Latin — the great translation school that fed European scholarship for centuries. The whole old town is UNESCO-listed and unchanged enough that El Greco's view from across the river still works. Synagogues, the Cathedral, mosques — they're all here within fifteen minutes of each other. Damascus steel and marzipan are the local crafts.
